Pea And Mint Soup

Ingredients(Serves 4):

  • 3 cups vegetable broth
  • 2 cups green peas
  • 1 cup fresh mint leaves, chopped
  • 4 tbsp basil leaves, chopped
  • 2 tbsp fresh cream
  • 4 tsp olive oil
  • Salt to taste
  • Pepper to taste

Method

  • Heat olive oil in a pan and add mint and basil leaves. Mix properly.
  • Let it cook for two minutes.
  • Add green peas and vegetable broth. Give it a little stir. Let it simmer for fifteen minutes.
  • Blend the soup and then add cream in it.
  • Season this with salt and pepper.
  • Drizzle it with olive oil. Serve this hot and tasty pea and mint soup.
