Cranberry Orange Coconut Bars

This vegan coconut bar can be the perfect afternoon snack. It’s delicious too!

Ingredients

  • 1 cup coconut butter
  • 1/2 cup dried cranberries
  • 1/4 cup coconut oil
  • 1/4 cup fresh orange juice
  • 1/2 tsp orange zest
  • salt to taste

Instructions

  1. In a saucepan, mix coconut butter and coconut oil over low heat.
  2. Once the mixture melts, add dried cranberries, orange juice, orange zest and salt. Stir well.
  3. Pour the mixture over a plastic sheet to form a layer of uniform thickness.
  4. Place this sheet in a refrigerator and allow the layer to set for 2 to 3 hours.
  5. Make equal rectangular pieces once it has solidified.
  6. Serve and cherish the cranberry orange coconut bars.
