Spicy Tahini Tofu (Stir Fry) with Rice Noodles

Warm up this winter with a spicy and delicious vegan Indonesian preparation of Tahini Tofu (stir fry) with rice noodles as you drench yourself in a creamy delight.

Ingredients

  • 2 cups tofu diced
  • 2 cups cooked rice noodles
  • ½ cup bok-choy
  • ½ cup kale shredded
  • ½ cup tahini
  • ¼ cup water
  • 2 tbsp. sriracha sauce without garlic
  • 2 tbsp. soy sauce
  • 4 tsp. lemon juice
  • 3 tsp. sesame oil
  • 2 tsp. sesame seeds toasted
  • 2 tsp. sugar

Instructions

  1. Heat tahini, 1 tsp, sesame oil and sugar in a small saucepan over low heat with constant stirring. Add enough water while heating until you get a smooth creamy sauce.
  2. Heat another saucepan to medium temperature. Add 1 tsp. sesame oil and sauté the tofu. Cook until the tofu is slightly browned.
  3. Lower the heat and slowly add the creamy sauce. Add sriracha sauce, soy sauce and lemon juice. Stir continuously until everything is coated. Do not overcook.
  4. In a separate pan, sauté bok-choy and shredded kale with 1 tsp. sesame oil.
  5. Assemble this spicy tahini tofu with rice noodles, sautéed bok-choy and shredded kale. Season this with sesame seeds and serve this spicy delight.
