Smoky Black Beans Almond Butter and Beans Wraps

This appetising vegan dish using almond butter is a healthier version of a burrito as it is filled with beans, oats and vegetables.

Ingredients

  • 1 cup oats partially ground
  • 3/4 cup black beans rinsed, drained and boiled
  • 1/3 cup roasted corn
  • 1/2 cup bell peppers chopped
  • 3 tbsp sunflower seeds
  • 3 tbsp almond butter
  • whole wheat wrap rolls
  • 1/2 tbsp chilli powder
  • paprika to taste
  • oregano to taste
  • basil fresh or powdered to taste
  • parsley fresh or powdered to taste
  • black pepper powder to taste
  • 3 tbsp olive oil
  • salt to taste

Instructions

  1. Heat 1 tbsp olive oil in a pan. Add corn and cook until the corn turns golden brown. Set it aside to cool.
  2. In a bowl add black beans and almond butter and mash with a fork until 3⁄4th of the beans are mashed.
  3. Add corn, bell peppers, sunflower seeds, oats, all spices and salt to this mixture. Mix them properly.
  4. In a pan, add remaining olive oil and cook this mixture.
  5. Stuff this mixture in whole wheat wrap rolls to assemble the wraps.
  6. Serve these wraps hot with a dip of your choice.
