Smoky Black Beans Almond Butter and Beans Wraps
This appetising vegan dish using almond butter is a healthier version of a burrito as it is filled with beans, oats and vegetables.Ingredients
- 1 cup oats partially ground
- 3/4 cup black beans rinsed, drained and boiled
- 1/3 cup roasted corn
- 1/2 cup bell peppers chopped
- 3 tbsp sunflower seeds
- 3 tbsp almond butter
- whole wheat wrap rolls
- 1/2 tbsp chilli powder
- paprika to taste
- oregano to taste
- basil fresh or powdered to taste
- parsley fresh or powdered to taste
- black pepper powder to taste
- 3 tbsp olive oil
- salt to taste
Instructions
- Heat 1 tbsp olive oil in a pan. Add corn and cook until the corn turns golden brown. Set it aside to cool.
- In a bowl add black beans and almond butter and mash with a fork until 3⁄4th of the beans are mashed.
- Add corn, bell peppers, sunflower seeds, oats, all spices and salt to this mixture. Mix them properly.
- In a pan, add remaining olive oil and cook this mixture.
- Stuff this mixture in whole wheat wrap rolls to assemble the wraps.
- Serve these wraps hot with a dip of your choice.
