Cucumber Salad with Peanut-Lime Vinaigrette

Ingredients

For Peanut-Lime Vinaigrette
  • 1 tbsp lime juice
  • 1 tbsp creamy peanut butter
  • 1 tbsp toasted sesame oil
  • 2 tbsp grape seed or peanut oil
  • 1⁄2 tsp salt

For Salad
  • 4 medium cucumbers peeled and sliced
  • 1⁄4 cup chopped dry-roasted peanuts
  • 2 tbsp coriander leaves kothmir

Instructions

For Peanut-Lime Vinaigrette
  1. Whisk together lime juice and peanut butter in a small bowl.
  2. Whisk in grape-seed and sesame oils until emulsified.
  3. Whisk in salt.

For Salad
  1. Arrange cucumbers in single or double layers on a platter.
  2. Drizzle with Peanut-Lime Vinaigrette.
  3. Sprinkle with peanuts and coriander leaves.
