Let us relish a traditional Parsi sweet dish, Ravo


  • 3 tbsp ghee
  • 3 tbsp semolina
  • 150 ml water
  • 5 tbsp sugar
  • 1 litre milk
  • 125 ml cream
  • 1⁄2 tsp sweet cardamom powder (elaichi)
  • A pinch of grated nutmeg (jaifal)
  • For decoration:
  • 2 tbsp shredded almonds (badam)
  • 2 tbsp raisins (kismis)
  • 1⁄2 tsp ground cardamom


  • Heat ghee in a pan. Add semolina.
  • Saute for 1 minute. Pour in water and sugar.
  • Stir continuously until thick.
  • Pour milk and continue stirring until semolina thickens again.
  • Pour in cream and reheat. Add spices.
  • Serve decorated with almonds, raisins and cardamom.
