Ingredients(Serves 4):

  • 2 cups fresh strawberries, finely chopped
  • 1 cup crumbled vanilla sponge
  • 1 cup whipped cream
  • ½ cup fresh strawberry puree
  • ½ cup strawberry juice
  • 4 tsp sugar
  • 1 tsp lemon juice

Method

  • Mix crumbled sponge and strawberry juice in a bowl.
  • In another bowl, mix chopped strawberries, 1 tsp sugar and lemon juice.
  • In another bowl, add whipped cream, strawberry puree and 3 tsp sugar. Beat well to prepare the strawberry mousse.
  • In a shot glass, assemble 3 layers by scooping in a spoon each of crumbled sponge mixture, followed by chopped strawberries mixture and then by mousse.
  • Garnish with a few strawberry pieces and a whisk of whipped cream.
